Crab Cakes
makes approximately 12 cakes
Ingredients
500g White fish such as Cod, Haddock or Whiting
200g White Crab Meat
50g Brown Crab Meat
1 Egg White
5 Spring onions
1 Lime
Pinch of Salt, Pepper and Paprika
Chopped Coriander (approx 1/3 Bunch)
1. Mince the White
Fish in a food processor, add the egg white, salt, pepper
and paprika and blend until it forms a smooth paste
like appearance and place into a clean bow.
2. Pick through the
white and brown crab meat with your fingers to remove
any bits of broken shell
3. Finely chop the
spring onions and coriander.
4. Finely grate the
zest of the lime and squeeze the juice.
5. Add all of the prepared
ingredients to the minced fish and mix well with a wooden
spoon until all the ingredients are thoroughly combined.
6. Divide the mixture
into 12 equal sized balls and shape with a palette knife
into small burger shaped piece.
7.These can be stored
in the refrigerator until needed.
8. To cook simply brush
with a little Olive Oil and place onto a preheated BBQ
and cook for 2-3 minutes on each side or alternatively
can be cooked in a frying pan if preferre.
These go very well with some homemade Chilli Jam or
Lemon and Coriander Hummus which I have also included
the recipes for.
